About the Recipe

Ingredients

  • 3 large potatoes, peeled and cubed

  • 1 onion, finely chopped

  • 2 tomatoes, blended or finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp tomato paste

  • 2 tbsp oil (peanut, sunflower, or vegetable oil)

  • 1 tsp cumin

  • 1 tsp coriander powder

  • 1/2 tsp black pepper

  • 1/2 tsp turmeric

  • 1/2 tsp salt (to taste)

  • 1-2 cups water or broth (adjust for consistency)

  • 1 green chili (optional), chopped for extra heat

  • Fresh parsley or cilantro for garnish

Preparation


1️⃣ Sauté the Aromatics:

  • Heat oil in a pot over medium heat.

  • Add chopped onions and sauté until golden brown.

  • Stir in garlic and cook for 1 minute until fragrant.

2️⃣ Add Tomatoes & Spices:

  • Mix in tomatoes and tomato paste, stirring well.

  • Add cumin, coriander, turmeric, black pepper, and salt.

  • Let the mixture cook for 5-7 minutes, stirring occasionally.

3️⃣ Add Potatoes & Simmer:

  • Add cubed potatoes and mix to coat them with the sauce.

  • Pour in water or broth, just enough to cover the potatoes.

  • Bring to a gentle boil, then reduce heat and let it simmer until potatoes are tender (about 15-20 minutes).

  • Stir occasionally to prevent sticking.

4️⃣ Adjust & Serve:

  • If the stew is too thick, add a little more water. If too thin, let it cook uncovered for a few minutes.

  • Taste and adjust salt and spices as needed.

5️⃣ Garnish & Enjoy!

  • Sprinkle with fresh parsley or cilantro.

  • Serve hot with kisra, asida, or rice.
