
About the Recipe

Ingredients
3 large potatoes, peeled and cubed
1 onion, finely chopped
2 tomatoes, blended or finely chopped
2 cloves garlic, minced
1 tbsp tomato paste
2 tbsp oil (peanut, sunflower, or vegetable oil)
1 tsp cumin
1 tsp coriander powder
1/2 tsp black pepper
1/2 tsp turmeric
1/2 tsp salt (to taste)
1-2 cups water or broth (adjust for consistency)
1 green chili (optional), chopped for extra heat
Fresh parsley or cilantro for garnish
Preparation
1️⃣ Sauté the Aromatics:
Heat oil in a pot over medium heat.
Add chopped onions and sauté until golden brown.
Stir in garlic and cook for 1 minute until fragrant.
2️⃣ Add Tomatoes & Spices:
Mix in tomatoes and tomato paste, stirring well.
Add cumin, coriander, turmeric, black pepper, and salt.
Let the mixture cook for 5-7 minutes, stirring occasionally.
3️⃣ Add Potatoes & Simmer:
Add cubed potatoes and mix to coat them with the sauce.
Pour in water or broth, just enough to cover the potatoes.
Bring to a gentle boil, then reduce heat and let it simmer until potatoes are tender (about 15-20 minutes).
Stir occasionally to prevent sticking.
4️⃣ Adjust & Serve:
If the stew is too thick, add a little more water. If too thin, let it cook uncovered for a few minutes.
Taste and adjust salt and spices as needed.
5️⃣ Garnish & Enjoy!
Sprinkle with fresh parsley or cilantro.
Serve hot with kisra, asida, or rice.
